Cooking assorted fried rice the right way

Assorted fried rice is a Nigerian dish that originated from the country’s diverse culinary influences. It is believed to have evolved from traditional fried rice recipes and incorporating local ingredients and flavours.

The dish gained popularity in Nigeria’s urban centers, particularly in Lagos, where diverse culinary traditions exist. Assorted fried rice reflects the country’s love for variety, abundance, and flavoured food.

Ingredients:

Long grain rice (parboiled)

Assorted proteins (prawns, fish, liver, chicken, beef, smoked fish)

Vegetables (onions, carrots, green beans, peas, bell peppers)

Curry

Thyme

Garlic

Onion

Ginger

Seasoning cubes

Salt

Stock (chicken or fish)

Oil

Spring onions and parsley and ground crayfish (optional)

Preparation

Season chicken, beef, and liver with a mix of curry, thyme, garlic, onion, ginger, and seasoning cubes.

Cook lightly.

Saute prawns for a moment and fry fish just enough to hold its shape.

Wash and cook long grain parboiled rice in seasoned chicken or fish stock until 70-80 percent done.

Fry onions, garlic, and ginger in hot oil until fragrant.

Add diced carrots and green beans, followed by peas and bell peppers.

Stir-fry the rice with vegetables, then add pre-cooked meats and seafood. (Optional)

Add stock if needed, cover briefly, and sprinkle with chopped spring onions and parsley. (Optional)
