Breakfast bonding session: How to make Ube Pancake

Kids love pancakes, no doubt about it. They can eat several pieces of pancakes for breakfast – spread generously with butter or jam; drizzled with maple syrup, strawberry syrup, or chocolate syrup; or topped with freshly made fruit preserve.

They also like their pancakes flavored and mixed with chocolate chips, peanut butter, or diced fruits. Chocolate pancakes with chocolate syrup, vanilla pancakes with strawberry preserve… Any combination sounds like a delightful treat.

Now that ube (purple yam) is trending worldwide, how about ube pancakes with honey, halayang ube or ube jam, or langka (jackfruit) preserve? This easy-to-follow recipe by Chef Pablo “Boy” Logro should come in handy whenever you crave for this special treat.

Ube Pancakes

Ingredients:

1 1/2 cups flour

1/2 cup ube powder

4 tbsps. sugar

4 tsps. baking powder

1/2 tsp. salt

2 eggs

1 1/2 cups milk

4 tbsps, melted butter

1-2 tsps. ube extract

Procedure:

1. In a large bowl, combine dry ingredients – flour, ube powder, sugar, baking powder, and salt. Mix. Set aside.

2. In another large bowl, combine wet ingredients – eggs, milk, melted butter, and ube extract. Mix with a wire whisk until smooth and incorporated.

3. Pour buttermilk mixture (wet ingredients) into the flour mixture and gently stir. Do not over-stir because you want a coarse pancake batter.

4. Put a little oil (*Chef Boy Logro likes to cook pancakes with a combination of butter and oil) on a pan and gently pour in about 2/3 cup of pancake batter. Cook for 2 to 3 minutes per side, or until bubbles appear and center is cooked and the sides are turning golden. Flip over and cook the other side for another minute or two. Repeat process until all pancake batter is consumed.

5. Serve pancakes warm with honey or preferred topping. Enjoy!
